Gavalas Vinsanto



This sweet dessert wine is produced from the grape varieties of Assyrtiko, Athiri and Aidani in Santorini. The vinification is carried out using traditional techniques and the wine is bottled in limited quantities. The grapes are sun-dried for 10 -15 days in order to concentrate the sugar levels. The juice then ferments naturally in 80 year-old old Russian oak barrels and ages there for 6 years. It has complex aromas of raisin, dried figs, prunes, caramel, dark chocolate and coffee; a concentrated body with high acidity; and a long aftertaste. It is best enjoyed chilled to around 6-8°C and pairs perfectly with chocolate cakes, bitter chocolate, vanilla ice cream, baklava and blue cheese.

Gavalas Winery: Gavalas family winery is one of the oldest wineries in Santorini. In the traditional village of Megalochori, the fourth generation of winemakers aims at highlighting the unique characteristics of Santorini’s terroir. The family-owned winery celebrates local varieties and only produces limited quantities of wine every year. Gavalas winery vinifies the most vibrant variety in Greece, Assyrtiko, as well as Aidani, Mandilaria and Mavrotragano. It is the only winery in Santorini that vinifies the indigenous rare varieties of Katsano and Voudomato.
