Walnut & Cherry Butter with Honey & Fig Molasses

This week we celebrate both Shrove Tuesday (also known as pancake day) and Valentine’s Day. So today’s recipe is a delicious pancake filling that also makes for a wonderful Valentine’s Day breakfast, along with some crusty bread or porridge and a cup of tea or coffee. It’s a very special fruit and nut ‘butter’ with honey and molasses. It is an absolutely delicious smooth ‘butter’ with tasting notes of nuts and honey and aromas of cloves and summer fruit.

With this recipe, we embrace old food traditions and rediscover our love for real food, that is food made with pure ingredients, with passion, but also with care and respect for the environment. The small family businesses who produce our walnuts, cherries, honey, fig molasses and sea salt attest to that. This recipe also makes for a wonderful, sustainable gift: just place it in jars and share it with your loved ones.

Makes 2 jars

Ingredients

200g walnuts
100g dried cherries
2 tbsp wild flower honey
2 tbsp fig molasses
Pinch of sea salt
Pinch of ground cloves
100ml water (plus more if needed)

Process

In a blender whiz together the walnuts and cherries until smooth (it will take a few minutes). Transfer the mixture into a bowl.

Add the honey, molasses and sea salt and using a wooden spoon or spatula mix everything together, adding water as needed to loosen up the mixture to your desired consistency (we used 100ml for a spreadable but not too loose butter).

Serve with pancakes, over toasted crusty bread, in your porridge, or simply eat straight from the jar.
