This is a traditional Greek walnut cake recipe perfect for any occasion!
1 Cup sugar
1/2 Cup honey (or replace with sugar)
1 1/2 Cups water
1/2 Cup lemon juice and peel
(Optional: dash of brandy)
Make the syrup first by mixing all the ingredients bringing to boil and simmering for about 10 mins. Then let the syrup cool down until the cake comes out of the oven.Mix the sugar and the olive oil, then slowly add the eggs. Mix flour, sugar, spices and semolina then add to the egg mix. Add the crushed walnuts. Pour the mix into the baking pan.
Bake at 170C for approx 35mins. As soon as the cake comes out of the oven, slowly and evenly pour the syrup over the cake using a soon. Let cool down and serve plain or with cream or ice cream (traditionally mastic ice cream)
