Fig is the star at farmers’ markets all over Greece this time of the year, and we couldn’t but celebrate this summer fruit by creating a delicious Lemon & Fig Semolina Cake. This cake is inspired by traditional Greek recipes that call for olive oil instead of butter, and semolina that adds a wonderful texture and depth to your batter. The aroma and acidity of lemon complements the sweetness of figs in this moist cake. This cake is perfect drizzled with grape molasses and served with fresh figs and Greek yoghurt.
Lemon & Fig Semolina Cake
Ingredients
- 1 cup all-purpose flour
- 1/3 cup coarse semolina
- 1.5 tsp baking powder
- ¼ cup caster sugar, plus more for sprinkling
- ½ cup honey (we used pine honey)
- ¼ cup olive oil
- ¼ cup yoghurt
- 1 lemon, both zest and juice (about ¼ cup)
- 2 eggs
- 5 figs
- Grape molasses (to serve)
Process
Preheat the oven at 180C.
In a large bowl sieve together your dry ingredients, flour, semolina and baking powder. Add the sugar and stir well until fully combined.
In a separate bowl whisk together your wet ingredients, honey, olive oil, yoghurt, lemon juice and zest and eggs. If your honey is not very runny you can warm it up by submerging the jar in hot water for a few minutes. Let it cool before mixing with the rest of the ingredients.
Add the dry ingredients to your bowl and mix well using a whisk or a wooden spatula. You should have a smooth cake batter with no lumps.
Grease a round cake pan (15cm) with olive oil and sprinkle some flour. Add your batter.
Wash and cut the figs in half and place them on top of the batter, pushing them in gently. Sprinkle with 1 tbsp of sugar.
Bake at 180C for around 45minutes, or until the cake is ready. You’ll know when it is ready if when inserting a toothpick or knife in the middle of the cake, it comes our clean.
To serve, drizzle the cake with some grape molasses and serve with fresh figs and Greek yoghurt.
