Oliveology is hosting Lida Papamatthaiaki in a Cretan Cooking Workshop

Have you ever been to Crete? If you have, you almost certainly have a memorable meal to share! But for the uninitiated, Cretan cuisine is largely known as the most well-known regional cuisine in the country. It’s a successful brand name in its own right, recognizable by Greeks and global visitors alike.

Did you know it’s also considered a nutritionist’s dream? The Cretan diet is made up of plenty of olive oil and olives, seasonal vegetables, cheeses from sheep’s and goat’s milk, and pulses, along with a bounty of wheat products like bread and, of course, the glorious pastries that come in all sizes and fillings around the island! And most meals are served with local wine or raki.

This workshop is an excellent opportunity to discover how to cook and eat like a Cretan. You will learn how to make Cretan phyllo from scratch and then prepare irresistible pastries. You will master cooking vegetables to perfection, seasoning them simply with olive oil, sea salt, and dried wild herbs.
You’ll learn the story of the featured ingredients and recipes and the characteristics of different regional cuisines around the island. Nothing goes to waste on an island like this one so, we’ll share tips on how to properly store these ingredients and how to repurpose leftovers.

By the end of the workshop, you will be able to create beautiful dishes that consist of seasonal vegetables and rely on easy local ingredients like paximadia (rusks) for a quick but delightful snack. You’ll also taste and learn more about Cretan cheeses, like graviera and galomyzithra, and how to incorporate them into your daily meals.

Since the Cretans love enjoying their meals with wine, so our lunch will also showcase the flagship local grape varieties, and we’ll pair them with the dishes we cooked. Join us for a delightful voyage into the Cretan gastronomy!

The workshop includes learning basic cooking skills, tasting ingredients and participating in every step, from prepping ingredients to cooking and plating. You will leave with a selection of the recipes and a 10% discount voucher for Oliveology’s products. And at the end of the workshop we all sit around the table and share the food we’ve made!

Oliveology is hosting Lida Papamatthaiaki for a Cretan Cooking Workshop 

Lida is a trained chef, a sommelier, and a digital anthropologist, currently shuttling between Greece and the UK. She has a diverse culinary background, ranging from academic to practical.

She studied Social Anthropology, and during her studies, she participated in an oral history research project documenting food practices in Northern Greece. Lida is passionate about tangible and intangible heritage and has worked in museums but always found herself drawn back to gastronomy. Her postgraduate academic research looked into the rise of food blogging and the importance of its online and offline community.

She started working in food as a Borough Market trader and later combined that with food media for many years, focusing on promoting Greek gastronomy. She trained at Le Monde culinary institute in Athens, worked in restaurants in Greece and the UK, consulted for artisan food brands, and joined food conferences and culinary seminars. She trained at the UK Sommelier Association, and as a wine culture specialist, she particularly enjoys pairing food and wine.

Since 2018, she has been designing and hosting experiences including cooking workshops, wine tastings, supper clubs, walking tours, and even week-long food trips in Greece. Her workshops are inspired by the intersection of food heritage, culture, and history. She draws upon her memories from her home island, Crete. She is currently working on the production of the 4th season of the hit PBS television show My Greek Table, travelling around Greece, and documenting the local gastronomy and culture.

All menus are finalised two weeks before the date of the workshop. Please contact us directly with any dietary requirements and we will do our best to accommodate you.
As our workshops are hosted at a shared kitchen space, we cannot guarantee an allergen-free environment.

We will provide all equipment, aprons and ingredients needed. Some of the recipes will be hands-on and some others will be demoed by our Chef. As we will be on our feet, it’s a good idea to wear comfortable shoes. There will be plenty of food and drinks at the end of the workshop, as we will be tasting all the marvellous dishes we will be making. You will also go home with all the recipes, so you can re-create the dishes at home!

Cancellation policy:

A minimum of 4 weeks notice is required for cancellation so we can fill your space. You will be given a full refund or we can transfer you to another date. However, no refunds or changes can be made if cancellations are changed in less than four weeks. However, you have the option to give your ticket to a friend or family member.
