Autumn Granola with Olive Oil, Honey & Carob Molasses

If you’ve been following this blog for a while, you must know by now how much we love making granola. It’s one of our favourite breakfasts. We always look forward to walking up to a bowl of yoghurt with fresh fruit and granola, not to mention that it makes us feel quite healthy!

This week, we are preparing a very autumn-y granola, with olive oil, honey, walnuts, raisins and prunes, and carob molasses. This unique product is made from 100% Cretan carob pods. It is cold-extracted and with no added sugar and adds a warm chocolate-y aroma to your recipes. Give it a try!

Makes 1 large jar

Ingredients

200g oats
3 tbsp olive oil
3 tbsp honey (we used wild flowers honey)
1 tbsp carob molasses
100g walnuts
25g Corinth raisins
25g prunes

Process

Preheat the oven to 160C.

In a large bowl whisk together the olive oil, honey and molasses. Add the oats and mix everything together.

Roughly chop the walnuts and add to your bowl. Mix again.

Lay some greaseproof paper in a large baking tray. Spread out the oat-walnuts mixture evenly.

Bake at 160C, stirring every 10 minutes, until the granola is golden, about 30 minutes.

Let it cool and store in an airtight jar.

Serve with fresh fruit and yoghurt. Happy autumn!
