Very easy and super healthy recipe gluten-free/ wheat-free made with carob flour and olive oil.
Makes approximately 40 cookies.
1 cup olive oil
1½ cup brown sugar
1 cup orange juice
1 tsp soda
½ cup almonds
½ cup pine nuts
½ cup walnuts
½ cup raisins
1 tbs cinnamon
500g carob flour
½ tsp salt
In a large bowl, mix the olive oil and the sugar. Add the baking soda to the orange juice first and then pour into the sugary mixture and stir. You can add any types of nuts you have available. The above are some recommendations. Add the nuts and raisins, cinnamon and salt. Finally slowly add the carob flour (or carob powder) until the mixture develops a doughy texture. Scoop your cookie carob dough and make into small balls.
Bake for 20 minutes at 170C in a preheated oven.
