Cucumber Tzatziki Salad

Summer is in full swing and we feel slightly lazy to cook. This is an easy salad that you can put together in no time. It reselmbles (and is inspired by) the Greek tzatziki dip. Tzatziki is a much loved Greek dip, and a summer staple. You can find the classic recipe here, or a fascinating variation with beetroot here. This salad is a great accompaniment to anything grilled, and an excellent dish to take to a barbecue. Many love it as a main  meal on its own, for those warm summer nights when you need something vibrant and light.

Serves 2 as main or 4-6 as a side

Ingredients

  • 2 large cucumbers
  • 1 small bunch of dill
  • 100g Greek yoghurt
  • 4 tbsp lemon juice, plus zest from 1 lemon
  • 2 tbsp olive oil, plus more for serving
  • Salt, white pepper

Process

You can peel the cucumber or leave the skin on. In this salad, we loved peeling the one cucumber and leaving the skin on in the other. Cut the cucumber in large, bite-sized cubes. Set it aside.

In a large bowl mix together the yoghurt, lemon juice and zest, olive oil. Season with salt and pepper. Add a few splashes of water if the mixture is too thick. It should have the consistency of a loose béchamel sauce.

Add the cucumber and toss everything together until well combined.

Finely chop the dill and add it to your bowl.

Taste and adjust for seasonings, adding more salt or lemon juice if needed. Serve with more olive oil.
