Roasted Squash with Honey & Grape Molasses

Today we have a very festive recipe for you! We love cooking with squash this time of the year. So we decided to make a no-fuss holiday recipe with this favourite ingredient.

The secret is in the warm spices, but mostly in the combination of grape molasses and honey that create a sweet, sticky graze.

This dish could be a wonderful side dish, part of your Christmas buffet, or a main meal on its own. If you are serving it as a main, we suggest pairing it with our bulgur wheat stuffing and a simple green salad!

Serves 2 as main, or 4 as a side


1 squash (700g)
1 tsp mixed warm spices (we used cloves, nutmeg, cinnamon)
1 tsp sweet paprika
4 tbsp olive oil
2 tbsp grape molasses
2 tbsp honey
Sea salt


Preheat the oven at 180C.

Cut the squash in wedges or large bite-sized pieces. You can peel it if you want, but we love it with its skin on.

In a small bowl, whisk together the spices, olive oil, grape molasses and honey. Season with salt. Pour over your squash and toss everything together ensuring that all of the squash is covered with the glaze. You can also use a brush for this.

Bake at 180C covered for 30 minutes, then uncover and bake for another 20 minutes, until the squash it tender when pierced with a fork and caramelised.
