We love baking in October. This cake is inspired by the first pears that have appeared at the market, along with many other autumn fruits and vegetables. It is made with tahini, honey, grape molasses and fresh fruit. As a result, it has a very unique texture that resembles that of a Christmas pudding or fruitcake. Imagine a very dense, rich, sticky sponge with intense flavours of tahini, honey and molasses. The flavour brings to mind the Greek moustalevria, though the texture is very different. We love it with some olive leaf tea or coffee in the morning or in the afternoon.
Tahini & Honey Fruit Cake
Ingredients
150g tahini
250g honey (we used wild flower honey)
100ml grape molasses
2 large pears (approx. 600g), plus 1 more, sliced, for decoration
1-2 oranges (approx. 150ml juice)
Zest from 2 limes
½ tsp baking soda
400g all-purpose flour
Olive oil (to grease the pan)
Process
Preheat the oven to 180C.
In a large bowl and using a wooden spoon stir together the tahini, honey and grape molasses. The mixture will thicken, but worry not. Grate in the pears and add the lime zest. Mix well.
Juice the oranges. You should have 150ml of juice. Pour the juice into a mug or glass. Hold the mug above your bowl and add the soda to the orange juice. It will bubble over. Pour everything into the bowl and stir.
Sieve the flour and add it to your bowl. Mix well, until all the ingredients are just combined, but be careful not to overmix.
Grease a cake tin and sprinkle some flour. Pour the batter inside the tin and top with the pear slices.
Bake at 180C for 1-1.5 hours or until the cake is ready.
Serve with olive leaf tea.
