This week, we’ve prepared a wholesome salad, that’s packed with vitamins and nutrients. It is inspired by our own packed lunches at Oliveology’s Warehouse, lunches that often consist of some form of plant-based protein, and seasonal veggies and fruit.
Here, we’ve used a Greek favourite: black eye beans, These small, black eye beans are harvested every year from small organic farms in Northern Greece. They are perfect simply boiled and served with olive oil, lemon and herbs. Today, we’ve paired them with freshly grated carrots, at their best this time of the year and a zingy dressing with blood oranges. You can also add some roughly chopped pieces of blood orange in there too!
