In autumn, we always love making soups. They are an excellent way to cook whatever’s left in your fridge or cupboards, reducing food waste: leftover vegetables, wilted herbs, cooked rice, these few tablespoons of uncooked orzo that have been sitting on the cupboard. But more than this, there is nothing more comforting than having a big pot of soup ready when you get home.
This soup is filled with vegetables which makes us feel that we are taking care of our bodies. It’s also a choose-your-own-adventure recipe, you can also add whatever herbs you fancy, rice, orzo or potato, and then serve it with either lemon juice and olive oil (our favourite), but also go for some cream and crumbled feta cheese (we wouldn’t say no to that either).
