Plump Kalamata olives in a tangy citrus brine⭐️An absolute joy to encounter⭐️They are plump and glossy, gently crunchy and juicy, with slightly resilient yet tender enough skins⭐️The lack of added salt makes them hugely moreish – we could eat an entire bowlful without any sense of salt overdose⭐️The blend of herbs was really well chosen, complementing the subtle flavour of the olives⭐️The lack of added salt appears to bring the intrinsic flavour of the olive to the fore⭐️The oil in itself is evidently of great quality, and the meld of brine and oil would, on its own, make a wonderful salad dressing⭐️

⭐️These olives have an enjoyable texture – soft with a bit of a chew⭐️ We enjoyed the brine and oil, with notes of wild herbs⭐️They make for a moreish eating experience⭐️These plump olives have a great texture and strong flavour, with plenty of deep, savoury umami notes that never descend into too much bitterness⭐️The marinade is well judged, with vinegar and quality olive oil present and correct⭐️Snacking on these with a cold white wine would be a real treat⭐️

⭐️A deeply crystallised honey with marble-like striations⭐️The texture is utterly seductive⭐️Even palate delivery, with gentle length⭐️Intriguingly, there is slight astringency on the finish, preventing any sweetness from cloying⭐️An intriguing honey, clearly rarely encountered⭐️A sumptuous mouthful though, with a typically low sweetness and good evolution of gentle caramels⭐️Some subtle resinous notes come through as a good balance⭐️The pine, honeydew taste is delicate but present⭐️
