Leek & Potato Mash with Truffle Oil

Beginning our countdown to Christmas, we have started thinking of our festive table. There’s nothing that we enjoy more than hosting family or friends, or bringing a dish to a potluck dinner. Our recipe today is one that everyone will love- who doesn’t love mashed potatoes anyway? But a few twists turn this everyday dish into a truly festive delicacy.

In this recipe, slowly cooked, tender leeks and onions are mashed together with potatoes. This mash is lumpy, so you don’t really have to try to achieve the perfect smooth texture. We love serving this with some slowly cooked spring onions, and plenty of truffle oil! Oh and did we say that you can make this a few days ahead and re-heat on the day? Just add the spring onions and truffle oil before serving.

Serves 6 as a side

Ingredients

6 potatoes (we always use Cyprus potatoes)
1 large leek
1 small white onion
4 tbsp olive oil
Sea salt
thyme
2 spring onions and 1 tbsp olive oil (to serve)
2 tbsp truffle oil (to serve, or more, to taste)

Process

Scrub the potatoes and wrap each one tightly with tinfoil. Bake at 180C for 1-1.5 hours until tender (baking time will depend on the size of your potatoes). Alternatively, you can place the potatoes in a large pot with plenty of cold, salted water, and boil for 1-1.5 hours until tender.

In the meantime prepare your leeks and onions. Slice the leek very finely and finely chop the onion. Place 2 tbsp of olive oil in a medium-sized frying pan and over medium-low hear. Add the alliums. Season with salt and thyme. Gently fry them until translucent, for 10-15 minutes. Add the wine and let it evaporate, 5-7 minutes. Add the water and gently fry until the leek and onion are very tender but not brown. Set aside.

Finely slice the green onions (if using) and gently fry in the 1 tbsp of olive oil over medium-low heat until tender. Set aside. You can skip this step if you are serving your festive mash just with truffle oil.

Once cooked, peel the potatoes or cut in half and scoop out the flesh. Mash your potatoes and add the alliums and the remaining 2 tbsp of olive oil. Stir gently everything together.

You can serve your festive mash either with green onions or truffle oil (or both!)
