Made from fully-ripe organic grapes of the Xinomavro variety, this very special wine is produced by a family-owned single vineyard named PaleoKastra, which means the old castle, also known as Vissa during Homeric times. Multi-coloured low-yield xinomavro vines are grown in low fertility limestone-clay soil which, along with the area’s unique climate, gives grapes with high level, mature tannins. The wine is matured for 18 months in French oak barrels.
Pairs with game, red meat, tomato-based sauces and matured cheeses.
